Hi, I’m Clark

I've been farming vegetables for close to 10 years now. I started Lucky Cat Farm in 2025 to serve our Capital Region community. I'm so excited to be part of the Bethlehem farm project because it gives a young farmer like me the opportunity to level up, to access land and resources, and to get connected with the community!

Growing food answers my questions. It makes me feel more connected to nature and to my fellow people, it feels good to get my hands in the earth, and the veggies I grow just taste so good.

Rich & Mollie Daley, Founders of Sunray Community Farm

Sunray Community Farm, an in-development small-scale regenerative farm, nursery, and community space as part of the Farm initiative with BeECO.

Rich has been operating Sunray Sustainability, and working in community-based agriculture, ecological education, and regenerative land stewardship for many years. He has a deep appreciation of orchards, agroforestry, and perennial food systems that can nourish both people and place for generations. Mollie has spent her career as a professional educator within career and technical education, and helps lead community programs including Kids Cook for a Cause and the Kids Gardening & Nature Club at Honest Weight Food Co-op. She loves flowers, and looks forward to developing annual and perennial flowers on the farm.

We’re excited to be part of the collective farming project because it gives us the opportunity to continue building community-focused food systems while creating spaces for food production, shared learning, flowers, ecological stewardship, and connection with the land. We hope to run educational programs for people of all ages, and offer a roadside stand and more!

Together, we envision Sunray Community Farm as a place where people can connect with the land, learn practical skills, and help cultivate a more regenerative and community-centered future.

Eleanor's background spans education, coaching, and creative development. With a strong focus on process and progress, Eleanor helps learners move from where they are to where they want to be—one step at a time.
